Monte Cristo Sandwiches a la Don
Kathy M. writes, "In one of Betty's books (Onions in the Stew), she spoke of her husband Don making Monte Cristo sandwiches that contained ham, Swiss cheese, and turkey on white bread, dipped in egg and fried in butter." Here's a recipe Kathy has submitted:


1/4 pound sliced turkey from the deli (4 slices)
1/4 pound sliced ham from the deli (4 slices)
1/4 pound Swiss cheese from the deli (4 slices)
4 slices white bread
1 beaten EGG with 1 tsp. water placed in a shallow bowl or saucer
1/2 stick butter, softened

Spread one side of each slice of bread with softened butter. On the buttered side of 2 slices of bread, place 2 slices each of ham, turkey, and Swiss cheese. Top with remaining slices of bread, buttered side inward. Using toothpicks to keep the sandwiches together, dredge each sandwich (both sides) in the beaten EGG mixture. Fry in butter over medium heat in a small frying pan until bread is golden and cheese is melted. Makes 2 sandwiches. Good served with honey mustard to dip.
