Soup, Like Betty (never) Used to Make
Here's a recipe to warm your new year (southern hemisphere friends can try it now or wait six months).

Fiesta Sopa al Tío Tomás

2 cups Medium Chunky Salsa. Pace Picante Medium Salsa works great.
2 (15 oz) cans black beans, drained and rinsed.
2 cups frozen corn.
2 chicken breasts cooked anyway you like, cut into small pieces.
1 (14.5 oz) can Stewed Italian Tomatoes with Oregano & Basil
2 or 3 (15 oz) cans of Chicken broth.

Tear 3 or 4 corn tortillas into pieces and fry in your favorite oil until crisp. Or use tortillas chips.

In large pot over medium-high heat, combine all ingredients except tortillas and bring to a boil. Add spices: Cumin, Oregano, Garlic powder to your taste. Add tortillas now or sprinkle on sopa when served, reduce heat and simmer for 15 minutes.

Garnish in serving bowls with a spoon of fat-free sour cream and sprinkle with chopped cilantro.

This sopa is quick and easy to prepare and tastes Great in cold weather! I got the basic recipe from the Internet and tweaked it some. Hope you enjoy it as much as I did. Wishing you and yours a Great New Year !
